The Gelana Gesha Washing Station is a private lot owned by Israel Degfa on the slopes of Yirgacheffe.
The special thing about Israel's farm is his cultivation practices with much of this land farmed under greenhouse conditions and temperature controlled using a series of computers and thermal probes to acheive consistency in growth as the region faces unpredictable weather patterns as a result of climate change.
This lot is a Brazilian varietal known as Topazio and is special to Israel as it forms part of his plans for the future cultivars of Ethiopia. Topazio was discovered in the early 1960's and, for the most part, has hardly stepped foot out of Brazil since. This hardy and disease-resistant plant could be one of many tickets to maintain healthy coffee exports for Ethiopian farmers over the coming decades.
The final cup is something really unique. A sweet and refreshing lemon acidity on the first sip is then followed with a malt biscuit mouthfeel and a long banana ice cream finish.
