FALLA PACAMARA - Guatemala
Sebastian Falla is a fifth-generation farmer in one of Guatemala's oldest coffee growing families.
El Tempixque was purchased over fifty years ago by Sebastian's great grandfather, Arturo Falla. Arturo's legacy reaches beyond coffee and family stewardship. His vision for protecting the natural environment has been paramount throughout El Tempixque's long history. The preservation of the earth is a family investment. Each generation takes care of the earth to ensure the next generation can flourish.
As such, El Tempixque has several programmes in place to maintain the farm's ecological ambitions. One of these programmes involves the use of a reabsorption mill. This mill captures spent water from the washing process to prevent uncontrolled distribution of water around the land. This helps maintain soil acidity as well as preventing disasters like mudslides for the surrounding villages.
This coffee, a pacamara, is one of Sebastian's most prized collections. The Pacamara varietal is a creation of the Salvadoran Institute for Coffee Research (ISIC) back in 1958, which resulted from the crossing of Pacas and Maragogype. This lot certainly doesn't stray from our expectations of what pacamara has to offer. A creamy body supported by elegant acidity and soft sweetness, Sebastian Falla has delivered a gem and we're very happy to have established a direct relationship with him.
