FINCA FATIMA - Mexico
Steeped in the heritage of the Perez family and the devoted studies of Ernesto Perez, the Finca Fátima is exemplary of the progression the Mexican coffee industry has undergone in last couple of centuries. After years of study in America earning himself the accolade of both a licensed Q Grader and Processor, Ernesto Perez returned to the family owned farm, Finca Fátima, to apply his acquired wealth of knowledge.
With quality control and passion at the forefront of the focus, the farm was awarded as a top-10 finalist in Mexico’s 2019 Cup of Excellence after only one year of Ernesto’s return. Immersed in the Mesophilic mountain forest located in the highest region of the municipality of Tlaltetela, Coatepec, Finca Fátima is the glorious image of a lush coffee plantation shaded by endemic trees of the region.
Typica, Garnica, Caturra and Marseille varietals make Finca Fátima a dignified space at the epitome of specialty coffee production. As for the brew, you can expect sparkling grapefruit acidity paired with luxurious dark chocolate undertones ensuring each cup is a delight to the senses.
