Brimming with excellence, Jairo Arcila has pushed the boundaries of specialty coffee once again with this truly exquisite coffee.

For this microlot, cherries were strictly picked at the same level of ripeness and immediately transported over to La Pradera for processing. The coffee is then pulped and later exposed to a dry anaerobic fermentation for 48hrs. Wine yeast and orange pulp is added allowing natural sugars from the cherries and the orange pulp feed the wine yeast, resulting in a very active fermentation, intensifying the sweetness and flavour clarity in the coffee.

After fermentation, the coffee is then laid out to shadow dry on parabolic beds until the ideal moisture content is achieved.

A burst of Aperol meets the tang of mandarin with each sip of this yeast inoculation processed castillo from Jairo's farm, Finca Villarazo, in Quindio, Colombia. A delicate fizzy peach soda rounds off this coffee as a truly remarkable experience.
