Café La Cumbre is part of a family business that has its roots for more than 90 years. Husband and wife team Minor Jiménez Abarca (fourth generation family member) and Nancy Gaitán Cruz currently produce, industrialize and market specialty coffee in a sustainable and innovative way, improving the quality of life in the area of influence and at the same time offering unique experiences to coffee consumers. This includes the creation of Café de Cumbre brand, that sells their roasted coffee to Costa Ricans.
Located 15 minutes from San Marcos de Tarrazú, they state “our specialization is to cultivate varieties that develop their maximum genetic expression”.
Catuai cherries are picked when fully ripe and deep red. The cherries are allowed to ferment in barrels for 34 hours with no water, before being pulped. With 75% of the flesh left on, beans are then dried under the sun on patios before being finished in guardiolas.
